Hatsuyuki HC8E Question

Hi!
I just got an Hatsuyuki HC8E cube shaver and I was wondering how many 8 oz shave ices (approximately) you think I might be able to crank out per hour. Just wondering what to reasonably expect as I prepare for a big event.

According to manufacture specs, the 8e is capable of doing roughly 6lbs a minute which in turns make roughly 12 cups of ice. However the real ice capacity of the 8e's ice chute is only 3 lbs and you also have to factor in packing time, loading the ice, therefore is won't be possible to shave the full 6lb(2 load) capacity. I would rate the 8e as more like 3lb a minute which will produce you roughly 4-5 cups of shave ice since you have to factor in ice loss and melting. The 4 cups a minute will produce you a maximum yield of roughly 160 cups per hour, but a more practical yield would be around 120 cups per hour unless you have the man power to constantly add ice, pack, pour the syrup, etc.

hello i had a question about hc8e

Should i pack the shaved ice with a funnel when im finished to form it or just go straight to pouring the syrups on it? It seems as if syrup is mainly going to the bottom of cup

I believe if you want to maintain the presentation, and yet you want to contain the quality. Here's what I would recommend. You could pack the ice and form it by hand the best you can, and place the palm of your hands around the side while molding it. Once you make your shave ice big enough, you could then pour in the syrup whichever flavor your customers desire. Lastly, start shaping it using the palm of your hands like rolling a ball. Keep doing it till you get a really nice shape, similiar to using the funnel, but yet do not compress it too much. Please do that step gently, so you do not compress it too much. Making a good quality shave ice takes time to master so don't lose hope =)
