Are you open to the public? I was planning a trip to Honolulu in a few weeks to search for the best syrup. So far my favorite was Matsumotos. I do regular missions work with the homeless in Waikiki and am flying in again to help. I am opening up a shave ice business to help raise monies to help the needy in Hawaii (I currently live in Florida) and want to get the best.
However I don't expect them to give up their source so I need to make a visit to do the rounds.

Everyone got their own behind the scene work on syrup making I suppose. Some people on different island i've heard and tried got a great deal of success from it as well. Matsumoto's, Aoki's, Shimazu's, Ululani's, Locals Boys, etc. Although most of them are RETAIL with a brick and motar setup. I'm just a local with my lunch wagon, and serve a maximum of 10 flavors all from HTK, buying local once again. Guess what? It works great for me! Not looking for fame, just trying to make kids and families happy offering my shave ice on the weekends.
I think it boils down to what type of set up you are gearing towards for your business venture.
