Bahama Bucks recently opened a store where I live in Miami, Fl. I've known about them for some time now but never had an opportunty to give their shave ice a try until recently. Although the texture of their ice was pretty good, i was not too fond of their flavors. They all tasted like medicine and didnt impress me to say the least. What I do wonder is if anyone knows how they make their ice. Do they have a block ice maker?

I’m going to bump this ancient post. We have the same machines as Bahama Bucks, but we just can’t figure out how to match their texture. We are thinking maybe our ice supplier is using tap water vs. Bahama Bucks using filtered?

To get the finest texture :

1.) Avoid compressed ice at all cost. Use solid blocks of ice with filtered water

2.) Temper your ice before shaving

3.) Do not press on the ice when you shave

4.) Always keep your blade sharp and shave at a slower setting rather than high

To cheat, you can always add a bit of sugar into your ice.

Depending on how slush you want it, I would add more than a few ounces. When the ice is "too" fine, you will find that packing the ice will be difficult and also no one likes their hands and machine all sticky after wards.

Technically you wouldn't need to add any of the additives to the ice if your block is made with filtered water and frozen good. A good sharp blade and some light packing will create a nice texture you will be surprised with!
