Bleach solution, rinse, dry. Usually it's just a shake and rinse kinda thing, but a long bottle brush comes in handy for any funky stuff.

24 hours is not long enough to freeze a block, especially when it's in a freezer that is being opened throughout the day. I would buy another freezer. Eventually you'll want to buy an ice block maker, but that's a large investment ($6,000+).

How difficult would you say the learning curve is? A couple hours. If you have good quality blocks and brand new blades on the New Orleans style block shaver, a five year old child could turn out product as fine as a Swan can produce. But that's the rub... Ice blocks vary in quality and blades dull...

The Japanese/Hawaiian style machines are easier to get a good shave with, but if you learn to finesse the New Orleans style machines, you'll get just as good a shave and it'll be much much faster.

You should be good if you keep reapplying the sealer. Otherwise it will gain a unique "patina" over time.
