Assuming you are talking cubes, and portable, non-electric coolers, we use the standard $25 Coleman 48 Quart blue cooler, available at any Walmart, to store cubes for scooping into the shaver. Make sure the cooler does not have wheels if you are putting it on a table, to keep dirt out of your work area. Also make sure it has a tap to allow you to drain excess water. Make sure it has a hinged lid, not a removable one, to allow it to close easily and keep out dirt and insects.
To store extra bags of cubes at big events, we picked up a giant Igloo 150 Quart marine cooler on sale for $70. The extra insulation of the marine cooler keeps the ice longer than a standard cooler. Any large Coleman or Igloo"marine" cooler should do. Wheels would be a benefit to help move it around, but we didn't get them. I don't think the high-end coolers from Grizzly and Yeti are worth the extra money for a shaved ice business.

If you are talking electric freezers, or block ice, you'll have to get another opinion!
