How do you shape/pack the ice?

Postby mrjosco » Fri Apr 06, 2018 9:45 pm

I have been watching videos and working hard to get my product to the best quality possible. I have seen many different ways that Shave Ice is made. Some don't pack the ice, some pack the ice as they fill the cup, some pack the ice after the cup is full of ice and some pack the ice after adding syrup. How have you found is the best way for your business?

I have found that I get the smooth and easy to eat texture most consistently when I pack the ice AFTER adding syrup.

I never pack after flavoring. It seems like it's too heavy by then and collapses or becomes too dense.

I pack a little as I fill and then finish packing after filling, but before flavoring.

I packed very lightly to get a nice dome shape, but that's it. Anything more than a gentle touch results in compressed ice that is more crunchy than fluffy.
