It should freeze up overnight, shouldn't take days. As long as you keep the lid off and don't open/close the freezer doors alot it should be fine. Don't fill it up with cube ice to kick start the freezing, the cube ice messes with the solidity of the block and will cause the freezed block ice to be ...

It could be stretched to 7x7x7 all around, square or round molds don't matter. But make sure the ice is pretty even when you mount it on the machine or else it may spin out or the machine may wobble alot due to inbalance.

We use to carry glass bottles, however we eventually switched to plastic because it is lighter and also safer.
