Welcome to the forum.

I'd suggest having a separate freezer back at base that you use to freeze your blocks. Or try to buy blocks commercially. Trying to freeze in your cart sounds like a recipe for trouble.

A five-gallon jug of purified water like you can get at Walmart is about $6 and will fill 6 buckets.

We use the Dart 8SJ20 squat foam cups for our "small." It's by far our most popular. We do the 8oz flower cup as a large and the larger flower cup as an XL. We also do a dart 6oz cup as our Keiki (smallest) size.

Love the squat cups. They are my favorite of all the cups!

It's mainly mixing the simple syrup. And I agree, it's overkill to have to use a commercial kitchen for that. But that's what a lot of us run into in places where shave ice is not as common as some. :( :( :( :(

Yes, most don't. But most HD's inspectors know that it is only Sugar and water. If you have some local that's fine. The problem with ready made is the fruitose. It's way thicker and doesn't absorb as good as the cane. Really makes a difference with long lines. You really need to think about your CT...
