Hot water question

Good morning all,
I'm trying to get my act together and finally establish my shaved ice business. My plan is to get everthing done and start next spring. We want to start out small and just mainly work the festivals we have around here in kentucky. I'm looking at making a cart/trailer and going with the snowie theme. I'm going to build something like the one pictured. What do you guys do for hotwater? It's required by the health department here.

Most people mount a small tankless portable water heater on the outside of the trailer. Something like this: https://www.amazon.com/Camp-Chef-HWD5-T ... or+camping
You would need space for a 20 lb propane tank, and a 12 volt water pump like this one: https://www.amazon.com/Amarine-made-Wat ... +at+50+PSI.

You would not be permitted to use the propane system at inside events.

It looks like you already have a generator, so I'd go electric, rather than propane: https://www.amazon.com/Ariston-GL2-5-Electric-Mini-Tank-Heater/dp/B0006GVO12
