We decided to never leave the syrups in the trailer as they just got to hot and would melt the ice extremely fast. We were more worried about that then the syrup itself going bad (we usually go through the batch of syrup every week) This year we are going to be able to be plugged in full time and have a thermostat for the AC unit to keep it at a good temperature. Not sure if you have that luxury!
Thanks for the reply. I was asking primarily for the times I have a multi day event out of town even scheduled. I definitely have options but just was not sure if the syrup would become unsafe. Since posting the question I had an expert confirm that there were no health concerns with it. That is what I cared about the most.
Hi TWH, quick question. Did your expert confirm there were no issues with the temperature in your specific area? I'm thinking there must be a limit, temperature wise at which syrups can be stored before they ferment?
My parents feed hummingbirds and I know in the warm summer months they have to be conscious of the simple syrup mixture in the feeder spoiling.

we never leave syrups for too long in hot temperature. i'm cautious about leaving it for any longer than a couple of hours just in case the integrity of flavors go bad. however i never confirmed, just a general store policy.
I wouldn't recommend leaving syrups in the vehicle over night unless you have refrigeration on or something. The vehicle/trailer itself can get a lot hotter inside being all enclosed than the outside temperature. Safe than sorry is my policy.

Doesn't stevia turn bitter if it's warmed up? I think that's why it's not often used in cocoa or hot drinks. If you're using stevia syrups and leaving them stored in a warm truck overnight they'll still be food safe but they might not taste right the next day.
