Hi!

I am wondering if anyone know what goes into making homemade syrups like Hansen's and other places that use their own recipes? Do places like this use preservatives?

Most homemade syrups are made from puree or juice. You can boil the fruits and puree it or you can make your own extract which is a bit more work. Some stores also purchase puree's from a food distributor. You would also need to use raw sugar which requires you to boil.

In order to advertise as 100% natural, you simply can't add any form of chemical or processed materials into your flavoring which is quite hard since puree syrup has a really poor shelf life. You also want to stay away from processed sugar. I am not familiar with Hansen's flavors but if they move their syrup quick enough, they won't need preservatives.

That being said, most concentrated "Natural" flavoring including our own contain preservatives. And that goes for all shave ice supply vendors out there. There is simply no way to make something on a larger scale without adding preservatives.

Another tip, pure fruit flavors do not necessary taste well. Try tasting puree strawberries or cherries straight, they don't taste that good without added sugars or extracts. Many stores "blend" their natural fruits with a base to smooth out the taste. You can do this by adding a Natural concentrate into your real fruit flavor.
