Popular flavor varies from location to location but you can never go wrong with strawberry! Strawberry, banana and vanilla are the standard flavors for "the rainbow." I personally love cotton candy, green tea, lychee and apple. Thinking of all these flavors make me want a shave ice too.

They work great on my shave ice! They are not overly bright like neon colors nor are they dark and dull, but they make a perfect rainbow for my rainbow shave ice!

Chinaman hat would be li hing mui, which is a very popular local flavor in hawaii. It is actually a crack seed here and comes in powdered form as well. Glad you like it! We have had alot of people in the mainland requesting that flavor since it produces a good sweet and sour taste to it. Not to mention the concentrate content for that flavor is very thick, so once it is made into syrup it will sit well on top of your shave ice.
